I've deleted apps, signed out of iCloud accounts, etc... and Erased All Content and Settings on an old iPhone 6 still running iOS 8. Supposedly erasing via Apples official method destroys the decryption key so any data is unrecoverable/scrambled. If someone jailbreaks the phone, could that enable a way to recover data?

I know it sounds conspiratorial, but...
 
I guess it depends on who gets hold of your old iPhone 6. Unless it's the FBI or CIA, it's unlikely that anyone would be able to unscramble and recover the erased data.
 
This is a function that I love about the iPhone. I did the functional equivalent to that on an android device, gave it to a friend, and he found some of my music and pictures on the phone. I don't know if that was just exclusive to Samsung phones but I feel a lot better knowing that erase all content means just that on the iPhone.
