Hi,

I'am looking for a way to get back some text I deleted inside a note. Not the note itself. Some kind of Time Machine for Notes. Any way to do this? That's an important information I need at my job... thanks

Time Machine is about the only way to get it back, as long as it was backed up. But with TM, will need to restore ALL the Notes that are in that backup, so will wipe out any newer deltas, newer Notes, etc.

Some talk around this.

Unfortunately i'am looking for a way to do this from an iPhone, not a Mac

Then it looks like you are out of luck. Notes are not backed up anywhere in iCloud or on the iPhone. Or anywhere, really.
