3G phones can be upgraded and downgraded as much as you wish.

You can use iTunes to put official 3.0.1 back on your phone (choose set up as new phone to get rid of any gremlins) then use Redsn0w to JB to 3.0.1

Yes, you can skip the stock 3.0.1 step, but you make have some weird things going on. Always choose set up as new phone.
