Both are the same exploit, I think redsn0w is more userfriendly. Also if something goes awry with either deleting jailbreak data or messing up the jailbreak installation redsn0w is supposedly able to fix it.

Dwalls90, you lost me here... What's the difference between the way Absinthe exploits and installs Cydia from Corona way of exploiting? Or is it all the same? Is there any difference between JB's?

Absinthe is the JB program. Both Absinthe and redsnow use the same exploit to JB A5 devices.
I'd go with redsnow, seems to be a little more solid but absinthe never failed me either so not much a difference anyway.

I have been trying to figure this out for a few days... I used Absinthe to JB my 4S (5.0.1). I saved my blobs. Is there something I can do with the redsnow program that will allow me to fix things if I mess my phone up so that I wouldn't be stuck having to do a restore and upgrade to 5.1?

No, nothing you can do at the moment in case you need to restore.
There's talks about using those blobs in the future to restore or downgrade your 4S and even rumors about programs that will allow you to restore your iPhone without using iTunes at all.
