I would like to clean install MacOs on a old MacBook that I mainly keep for Windows when I need it

Not sure if it possible without erasing or compromising bootcamp partition with windows
I'm on Ventura... I didn't even expect I could upgrade to Ventura :)
 
Sounds like a good idea. However, this apple page seems to indicate that Erase All Content and Settings can't be used if you want to retain a Boot Camp partition:

When using Erase All Content and Settings, if you see a message explaining that other volumes need to be erased before you can erase all content and settings, you might have used Boot Camp to install Microsoft Windows. In that case, use Boot Camp to remove Windows and its partition.

Might be worth a try, though.

OP, I think what you want to do is possible by booting from Internet Recovery mode, but it might be tricky to make sure you remove the proper volumes, volume group, and container via Disk Utility and (I think) recreate a single volume for the installation process. Not having done this myself, I don't feel competent to step you through it.

Don't. There is no reason to do that with Ventura. If you were to do it, your new OS would be 100% identical to the old OS because that's the way it works. The operating system volume is read only and cryptographically sealed. It never changes.

Oops, my bad, thanks for pointing that out. The OP didn't mention what MacBook he's dealing with, but Erase All Content and Settings also works only with AS and Macs with a T2 chip.
