Is there a way to control my mac from my iPhone or iPad over a 3g network? If not, is there one that can be done at least using just different wi fi networks.
 
Logmein is free for personal use, its interface if cleaner then teamviewer so I'd say go with that. There's also gotomypc, but that's not free, but its faster then both of those
 
It is not free unless you are using a browser which is how I do it when I am on my iMac at home controlling my mother's iMac when she needs help. But that's as far as you get. If you want to use the iPad or iPhone......you need logmein ignition. I use logmein ignition on my iPad and iPhone and if I remember it was a $30 app from the app store. Works great.

Do these options have the ability to view your ichat camera?

I am wanting to set up a "nannycam" that I can view away from the house and view it on my iPhone if possible...
 
I use Remote HD all the time. it works seamlessly on iPhone and iPad.
As a matter of fact, I'm typing this via Remote HD!

it's free, and very clean.

Check it out, a FAQ on how to use 3G. It works very nicely on WiFi too!
