Before people ask, I did search the forums, and only found unanswered threads regarding this.

Is there a program (up to date) or even a feature in iTunes, where you can control the library of another computer, and output to the speakers connected, from a different computer?

Basically what you can do with the iPhone/iTouch app, but from a computer.

Any help would be great.

If you are using a Mac, just share the screen of the computer you want to control. Then it's just like you were sitting in front of the remote computer. Can do the same thing on vista with a free program like team viewer

iTunes Remote Control should be able to do this, although I haven't tried it yet. I once tried another tool - which I can't find right now - but didn't get it to work.

Another user suggests setting up Apple Scripts that target the remote client, like...

Code:
tell application "iTunes" of machine "eppc://192.168.1.200" to playpause

... for example, and then map them to custom keys via Spark.

Or we all wait for Synergy to include this functionality in a future update.
