I have a Space Gray iPhone 5S.
I have noticed some screen interlacing problems with the screen, and from what I've read, this is a somewhat common problem with the 5S.

Seeing that I can probably get it replaced with a new phone (assuming I don't go to a store with the new machine that replaces the screen..), do you think it is possible for me to get a Gold iPhone in place of my Space Gray one?

Has anyone heard of this with any other iPhone? Getting a new color when replacing it?
 
You have until 30 days (Apple Store) to return the original phone after you purchased it. And then you can buy the gold iPhone but if it passed 30 days then you are stuck with the gray one.
 
unlikely. the policy is like for like. i've heard of exceptions being made when your particular model isn't available, but i wouldn't count on it.
 
Usually they would give you the same color and same model.

If all else fails, you can just Return and re-purchase a Gold.
 
I have been through 4 Space Grey iPhone replacements, and because of this I asked the lady who was dealing with my case (she was a senior advisor) that I really don't like the Space Grey colour, and I would like to change the colour if it would be possible. She agreed and Apple are going to replace one in Silver for me, a brand new retail unit with a fresh 12 month warranty.

Edit: Whilst going through the 4 other iPhones, I asked twice if it were possible to change the colour and both times I was refused.

Exactly, they made an exception because of all the issues you experienced.
