I was wondering, if I have a 2007 model MacBook (black), would it be possible to replace the LogicBoard for a more updated MacBook model? Would the casing fit and everything else work fine?

You might get away with a 2008, but the 2009 model is the aluminum unibody and will not fit. I did this with a PowerBook G4 and it gave me a moderate boost, but was only worth it because I had to replace the board anyway. The money you'd spend to do this wouldn't be worth the performance gain you'd get, unless you can find the board for ridiculously cheap.

It wouldn't be worth it. The best you could do is a board from an 08 blackbook (2.4 C2D, accompanying Intel graphics), which wouldn't give you much of a performance boost at all, if any.
