There needs to be an option for resetting only accessibility settings without having to reset all settings (time consuming to put it all back).

Accessibility probably has the most nested options out of all settings and can impact device functions, sometimes in subtle ways that aren't immediately noticeable.

Added this as suggestion in Feedback – would appreciate if more people did the same.

I don't really understand, that sounds like an argument against it. Being aware of what you're changing when adjusting accessibility settings sounds like a good thing to me.
 
I totally agree. Being aware is one thing, remember which option you changed months ago to try this or that is another thing.

There definitely should be an option to reset accessibility settings without resetting all settings

Of course but how do you know what the defaults are if you want to revert a change made awhile back?
