Because of medical issue, I never used the right Airpod from my original set, which I picked up in December 2016. It basically sat on a shelf for 2+ years. so would not have received any of the firmware updates in that time. Now that I'm replacing them with the new Airpods version, I tried re-pairing both sideas as a set, and it doesn't seem to be working. Assuming that the battery hasn't died, I've tried resetting the Airpods using the button on the case after "forgetting" them on my phone, but every time I re-pair them, only the left Airpod seems to be registering/connecting. The battery read-out on the phone is not showing the right Airpod at all.

Any suggestions on what to do to fix this?

Once a battery falls below a certain percentage for a long time it probably goes into hibernation mode - there is an proper technical term that I cant remember. Youll have to see Apple or ask them on support chat. They might be able to revive it with some specialist equip at the genius bar - but equally it could now be dead and you'll have to pay £45 or dollar equivalent to replace one pod.
