This thread got me into the App Store and I found an app called Heart Analyzer that should help you do what you want to do. It basically accesses all the heart rate data from the Apple Watch and presents it on your phone in a more user friendly way. You can configure when it captures wake and sleep, and another user said that is how they capture their resting heart rate each day is to set the time to when they will be asleep and wearing the watch. for me, I'm not planning on wearing it sleeping, but I am usually at rest around the time it would get the sleep reading.

Don't really use the health data app so not sure if this will help, but you can also check your pulse rate when it is resting and manually go in and include that info. On your iPhone go into Health, Dashboard, and Heart Rate. You'll see Add Data Point. Let's you add Date, Time and bpm.

Wouldn't this info be auto added though if you went to Glances and got a reading or while in your workout swiped left or right to get your reading? Had my watch for some months now but still haven't explored all it can do or understand completely how things get tracked.
 
I just use Glances to get my resting heart rate. The only time I get an accurate reading is in the morning before getting out of bed. Because I exercise regularly at high intensity and long distances I only rely on an accurate reading one day after a full rest day (no exercise).
