When you make your phone backups, i believe you have to encrypt the backups in iTunes for this to be backed up. I easily transferred over everything to a SE over the weekend and carried on where I left off on the 6S+.
 
Everything else backed up. It's just the activity tab from the Apple Watch didn't transfer. As far as I knew I was backing everything up. All the steps transferred over as well.

Before you backup the phone, you needed to make sure to unpair your watch to trigger a backup of your watch to the phone. Then, like others have suggested, you needed to make sure if you were backing up to iTunes, that your backup was encrypted. If its iCloud, then its automatically backed up.
 
I backed it up twice. Once to iCloud and once to a physical iTunes. I also unpaired it. Was I supposed to back it up via iTunes again after I unpaired it? Everything else is there. It’s only the activity tab that hasn’t transferred over. Is there anything I can do to get that transferred across?
 
Yea, the backup of the phone needs to happen AFTER you unpair the watch. The act of unpairing triggers a backup of the watch to your phone. Afterwards, the backup of your phone to iTunes or iCloud would include that watch backup (as long as encryption is enabled).

Just to confirm, I need to backup the old phone to iTunes (or is iCloud sufficient?) does the SIM card need to be present in the old phone? Does it matter if I already put the sim into the new phone?
 
So.

1. Unpair Watch.
2. Backup iPhone (I’d use iCloud-which is encrypted)
3. Restore iPhone with last iCloud backup.
4 pair Watch
5. Disco?

FYI. For the health data to be backed up you either use iTunes(set a passcode for encryption) or iCloud (which encrypts)

I personally would use iCloud Incase for some reason I forget the 4 digit passkey when backing up via iTunes.
