Restore older iOS to newer iOS iPad

Wife has an original iPad Air on 12.5.5 iOS, I believe. Whatever latest it allows for. I backed it up to my MacBook Pro.

Getting her a new Air 5 which will be on 15.4?

Can I restore the older 12.5.5 iOS backup on my MacBook Pro to her new iPad Air 5?

Photos, Music etc in iCloud.

Any pitfalls?
