Restore through itunes

Can I restore my Jailbreaked and unlocked 3g phone with itunes? The initial firmware was 3.0 and i changed to 4.1 and then to 3.1.2.

I understand that it will be restored to 3.0

Will I be able to JB and unlock the phone again?

Don't think you can unlock the phone after installing 4.1.

A 3G can be downgraded to any 3.x.x firmware without needing hashes.
As long as your baseband is 5.13.xx or below, Ultrasn0w to unlock.
