Restoring files from old backup?

Does anybody know how to restore files from an old backup instead of just the most recent one like iTunes forces you to? I have vista and I was able to locate the folder where itunes stores backups (C:\Users\USER\AppData\Roaming\Apple Computer\MobileSync\Backup) but there are files with huge names in there and I don't know what to do with them. Is there anything i can do to restore old notes, sms conversations, etc.?
