Restoring iPad1 but keeping data plan on it?

I want to give my iPad1 to my brother. I also want to transfer my data plan to him, but I want the iPad1 restored as new. How can I best do this? Will the data plan remain on the iPad if I plug it into iTunes and restore as new?

I've restored mine in the past (for troubleshooting) and the data plan always remained. You're a cool brother to do that!

Data plan is stored on the SIM, not the iPad itself.
