iPod touch Restoring Original iPod touch Firmware

My first generation iPod touch is on its way to the technology graveyard, so I decided that I want to restore it to the original firmware that I bought it with for testing purposes (1.1.4). I just have a couple questions before I do.

1. Can I do the restore by just putting the iPod into DFU mode?
2. Will I need to jailbreak in order to do this?
