If I were returning a watch I'd probably opt for Fed Ex or UPS so that I could obtain better tracking information to ensure it arrived at it's destination. No matter how I'd ship it, I'd make sure you to require signature so that you have an indication of who signed for the package.

I agree with this. If you use USPS then just make sure you up the insurance to cover the cost of the watch.

How's this different from when you preorder anything from Apple and they shipped it to you? Packages can get lost either way, I find it's more risky with UPS and Fedex compared to post office.

It's different because if something happens to the returning watch during shipment then you are the one who loses. If you order something from Apple and something happens during shipping then it's on Apple to figure it out and cover the cost.
