MP 1,1-5,1 Reverse OpenCore installation on 5,1 back to High Sierra

Does anyone know how to go back to High Sierra from Big Sur using OpenCore on a mac pro 5,1. My software isn't compatible with Big Sur and I need to go back and I can't find directions anywhere.

1. backup your data
2. make a High Sierra install media
3. reset NVRAM - this will make your firmware no longer use OpenCore
4. boot the install media and erase the Big Sur drive - this will remove OpenCore
5. install High Sierra

So far things seem to be running okay with Big Sur on my work 5,1. I still have the other 5,1 running High Sierra. I did encounter a new problem today, my scanner and printer don't show up. I hadn't had to print or scan anything in a while.

Hi - both my macs OS X computers lost internet due to security updates from Apple.

I had to take my notebook (late 2017 MacBook Pro 15.4") to Apple for them to do a clean install of the OS (Ventura). The bad update from Apple was to 13.3.1.

But at the same time I got an Apple update for Monterey on my Mac Pro 5,1, and after doing it, the WiFi was flakey. To get WiFi I would have to turn the WiFi off, and then on, and it would then work. But soon, it failed completely. So too the ethernet connections - its not a hardware fault, but an Apple security based fault.

So now I have to down grade to Sierra or High Sierra, and then upgrade back to Monterey, and then recover my data from one of my back drives.

I bought a 2 TB WD blue SSD, put that into the Mac, and now I want to install preferably High Sierra onto that drive, and then update until I get to Monterey. I believe the internet will work as soon as I do a clean install.

Can someone show me a link on how to do a High Sierra install? I cannot see how to get High Sierra from Apple ... I have downloaded Sierra onto a USB, but I don't know how to make that install either.
