I've noticed that at idle my rMBP is using about 3GB of memory. Is this normal for this model? I'm coming from a 13" MBP with only 4GB of RAM so this seems quite excessive. Any suggestions?

Thanks!

That's what I've seen as well. I've actually seen as much as 4GB in use with no programs open. I assume that some background processes or memory cache was responsible.

I'm coming from Windows 7 where I've almost never seen more than 4GB in use at one time -- so 8GB seemed like plenty for this rMPB. I can certainly see why anyone who uses virtual machines would want the 16GB.
