I've just started using Gruml to sync with my feeds in Google Reader.

Just wondering why some feeds, including Macrumor's, only display a short summary and not the full post or images as other feeds do?

Can I change this? I want to be able to read the full article without having to click through to the site - kind of makes subscribing pointless otherwise.

That's a decision the site admin makes to force people to go to their website to view the article. Usually the reason they do it is for the ad revenue from unique visits. Nothing you can do about it as far as I know.
