Run against previous run

Could anyone point me towards how to go for a run and record it to run against the next time?

I’m sure I have read this is possible but can’t seem to see how.

According to this MacRumors article from September 23rd it's coming "later this year". Look at "2. Race Route". I don't see it yet on my Series 8 on watchOS 9
