Hi, I want to connect my Apple TV to the Slingbox but they don't share the same type of inputs/outputs

Apple TV output: S/PDIF optical (tos-link)
Sling Input: S/PDIF RCA (orange colored input)

Can someone recommend a converter? I found this but I have no idea if it's any good (does larger price equal better sound?

That is about the cheapest one you'll find.

And no, with digital audio more epensive usually only means you're getting more features such as AES/EBU, USB, and reclocking abilities, sound quality will not suffer.
