I'm looking for a Safari extension to put a button on the toolbar that when clicked on will show a drop down list of my bookmarks, similar to how Chrome's 'Other Bookmarks' button works.

The reason I'm looking for this is that I occasionally use Safari full screen, and as it stands, to access my bookmarks as a drop down list, I have to use the bookmarks menu item, but this causes the top menu to appear, and the toolbar to slide down a bit - nothing inherently wrong with that, I'd just rather it didn't start moving elements about on my screen.

I tried putting the standard bookmarks button on the menu bar, but all that does is open the bookmarks in the window, it's not a drop down like the menu item.

Does anyone know if such a thing exists?

You need to show all bookmarks and drag the bookmark folder containing your bookmarks to the bookmarks bar.
