I have a few Safari extensions (1Password, Vinegar, Wipr). I use them, but I don't want them to be very prominent. So I hold command and drag their items out of the toolbar.

But, for some time (perhaps since 12.0 Monterey?), any time an extension gets updated through the App Store, its toolbar item comes back.

This behavior is weird enough that I almost wonder if it's intentional? But I don't want that. If I wanted them back, I'd go to Customize Toolbar….

Has anyone figured out a workaround?

Apple seem to have a general principle that they don't want the user to forget that a Safari extension is installed and active. The icons also conspicuously light up blue when active and that's outside of the extension developer's control IIRC.
 
It is clearly faulty behaviour. The position of extension icons that you do want in the toolbar also reset/change after the app that contains the extension was updated.

I do appreciate this feature. It does make it easier to distinguish when an app is active on a particular website. I do have one extension where I control manually on which websites it is allowed to run.
