Whenever I open Safari, my iPod touch goes into sleep mode. It does not crash to the home screen or anything else. When I press the sleep button Safari is still up, but it came up with my bookmarks (since it's a blank page). I can press home to get out, of course, but I decide to do some testing. I press my Google bookmark, it goes back to the "main screen" of Safari and goes into sleep mode again. I turn it on, slide to unlock, and the slide to unlock screen appears again. At this point it is an endless loop of unlock screens and the only thing I can do is power it off. So it turns out that being on the "main screen" of Safari will trigger sleep mode.

I have never heard of this happening and I really would like to fix it without reinstalling. I hope I have explained clearly enough. My iPod touch is FW 1.1.1 and jailbroken.

How about upgrading to 1.1.2 or 1.1.3 or restoring. Being jailbroken, I don't blame you for having problems... you're doing stuff to your device that Apple is not officially supporting, so any problems that you have is your fault.
