Private browsing is right in Safari itself. Hit the button to open up the different tabs, and on the bottom right you will see "Private." Just hit that.

If you go to open a new tab, you'll see the toggle bottom left of the screen. Be warned it's still a little buggy though, which is disappointing for a stock app.

That's not been the case for me throughout the Betas and now. Just to confirm, you know you're in Private Mode as the top and bottom bars are dark and "Private" has a sort of Ghost Button around it.

Once you open a "private" tab, that tab will stay private until you close it. No need to enable/disable in settings.
