I was wondering if it was safe for me to disconnect my peripherals (ie. mouse and speakers) and the power cord whenever I choose. Do I need to go to some where in order to safely disconnect these things like in Windows XP?

Mouse and speakers are fine just to disconnect. External drives (including iPods in disk mode, some cameras and PSPs in USB mode) should be ejected first to ensure that anything in the write buffers is flushed to the device.

Where can I go to disconnect cameras and such?

Click on the icon and press command-e, or drag the icon to the trash (which turns into an eject icon).

You can also right click (or control click) on the icon for the device, and select Eject from the menu that comes up.
