Samsung Enterprise SSD PM883 is in a similar price range but more common in online stores than the Samsung EVO 860. I wonder if it will work correctly on Mac Pro 5,1 and why it is so unpopular among Mac users.

Ah gotcha, yeah then don't use the EVO. You might be able to find an older Samsung Pro line (great drives) they should work without issues. Not sure how big of an SSD you want.
You should also be able to do with an NVME (they seem cheaper than SATA SSDs nowdays which is hilarious) and a compatible PCIe NVME adapter. Much faster speeds
