I have another MBP, a mid-2010, that has a Samsung 850 EVO 2.5" SATA III 2.5in SSD 500GB that's worked perfectly the past couple of years. What I'm wondering is if anybody has used the new 860 series of this drive successfully in a late-2011 MBP?

Why? It's a standard SATA SSD, so it will of course work.

There is no "of course it will work". A lot of people with older Macs (including myself) are having issues with the EVO 860. Something is causing the whole machine to hang before EFI on hot restarts. Cold starts and shut downs do work, but on my MacPro it will not restart.
