From an Excel spreadsheet I've created a graph using the chart wizard. Is it possible to save a copy of that graph as a gif or jpg file?. If so, I'd appreciate some instruction on how to do that.

Would a .pdf work? If so, you can save a .pdf by selecting File > Print..., then click the PDF button.
Otherwise, I would suggest a screenshot. The keyboard shortcuts for these are in System Preferences > Keyboard and Mouse >Keyboard shortcuts.
depending on which method you use, you can open Preview, then File > new from clipboard (to see your image); then use File > Save as... to select the file format you want.
