Is there a program that will allow me to scan documents into my computer and then be able to manipulate the text? I created a very large document sometime back and burned the original to a DVD and now I can't find the DVD but I do have a printed copy. So. . . .

Most scanners come with the basic tools you need, including the scanner utility and some sort of low-end OCR package. Alternatively take a look at VueScan, which is an inexpensive alternative and quite a powerful scanning application, supporting a wide range of hardware. It has basic OCR built-in, which will allow you to export the text, but don't expect too much - quality OCR packages tend to cost two or three times the price of VueScan itself..
