Is there an on iPad screen sharing app that I can use to help my sales team? They aren't very tech savy and I will get calls saying they get some error with email or whatever and trying to point them into the right direction is like trying to point something out to a blind person.

Because of how iOS works, you will not be able to share the screen of the iPad. You can share other computer screens on an iPad, but not the other direction.
So the best solution is just have them facetime me with their iphone and show me the ipad. Another reason why we should've purchased surfaces instead..
What I do with my mom is have her send screenshots of her iPad, and send her back screenshots of my iPad.
There seem to be apps for this in the App Store.

That only allows certain documents to be shared from within the app; iOS cannot share the entire screen across all applications.
