I am attempting to do a screenshot without displaying the 'screenshot' label on the resulting image. How can I achieve this? I am running Catalina 10.15.7. TIA.

The macOS builtin screenshot facility doesn't add a label. Cmd + Shift + 3 (or Cmd + Shift + 4 to select rectangle).

Just "do the screenshot".
It should appear on your desktop with the name "Screen Shot xxx", with xxx being date and time.

Just click on the file and rename it to whatever you wish.

I think the OP needs to explain what they mean by "displaying the 'screenshot' label on the resulting image" because that is something unusual and none of our responses have really addresssed it.

Thanks for the input. This sis what I mean, at the bottom LH corner.

And OP, if you like whatever screenshot app you are using except for that label, consider just cropping the bottom of the image those few pixels to eliminate it. That looks like you would crop off maybe 12-16 lines at most...

Is that "screenshot" label really part of the image? It looks a bit like the kind of popup that is sometimes displayed when you "roll over" something with the mouse. Is it always in every screenshot? Is it possible that your mouse was just "parked" over something that caused a popup label when you took the screenshot?
