I noticed when taking a screenshot of a webpage, the option to take the whole webpage is no longer there.

The problem is not really that it's not there in iOS 15, but I remember it wasn't there in the latest iOS 14 either. And I remember it was there a few months ago.

Is there a wrong setting in my phone?!
 
I don't think there's a setting for it, but some web pages may accidentally ruin it with their styling.

My iPhone is on the iOS 14 beta program while my iPad is running iPadOS15. I can confirm that on the latest iOS 14, I still have the feature for screenshots of the MacRumors Forums.

Though I now just checked my iPad, on iPadOS15.... And it has it too for these forums.
 
Does that mean website developers are able to hide the selector to disable screenshotting the whole page?

I edited my previous post because I was incorrect about being logged in. It did happen that way once, but when I retested it wasn’t a factor. The above screenshot is your same NYT page but shows the Full Page option.

Also, although I’m sure you’re fully aware of this, it‘s still included in Apple’s iOS 14 user guide:

Take a full-page screenshot​

You can take a full-page, scrolling screenshot of a webpage, document, or email that exceeds the length of your iPhone screen. The screenshot is saved as a PDF.
  1. Do one of the following:
    • On an iPhone with Face ID: Simultaneously press and then release the side button and volume up button.
    • On an iPhone with a Home button: Simultaneously press and then release the Home button and the side button or Sleep/Wake button (depending on your model).
  2. Tap the screenshot in the lower-left corner, then tap Full Page.
  3. Do any of the following:
    • Save the screenshot: Tap Done, choose Save PDF to Files, choose a location, then tap Save.
    • Share the screenshot: Tap
      the Share button
      , choose a sharing option (for example AirDrop, Messages, or Mail), enter any other requested information, then send the PDF.
 
On a face id equipped phone, I used the tap 3 times option (the back of the chassis) in accessibilty to catch screen shots, but for documents I would save as pdf.

That has always happened intermittently for me (seems related to low RAM). The fix was to restart the device. Unfortunately, that occasionally means sometimes losing the page I want to screenshot (order checkout) so I just make do with saving an image or using the Print function and dealing with a crappily laid out document.
