So I've taken the plunge and installed watchOS 3 beta 5 on my Apple Watch.

I was curious to test out the feature I believe is called "scribble" (handwriting recognition), but it is nowhere to be found. The icons I have when replying to a text are different to what I can find on the Youtube videos describing the feature.

Is anyone else missing the feature in beta 5? Or do I need to enable it somewhere?

    Thank you.

In the meantime I found out the reason: it only works for conversations in English. In other languages it doesn't appear.

I really hope other languages will come shortly.

@ManuCH make sure your default keyboard in iOS 10 is set to English. When I had mine set to Español scribble disappeared. I re-ordered my keyboards and scribble came back.
