Should I edit these settings...I obviously want my Mac to be safe and secure...Do I need a firewall? And do I need FileVault?

Yes turn firewall on. Shouldn't do any harm. The stealth mode option in firewall does cause a few minor hiccups with some apps but nothing serious.
