So I purchased a used iPhone 11 (256gb if it matters)

After doing a restore from backup from my iPhone 6s I began noticing issues with the touch screen. Temporary freezing, lag etc. I've found some work arounds but WTH it should just work. I've even got a ghost touch issue when using a wireless charger (Anker) My iPhone 6s was jailbroken and had been restored from jailbroken backups. So who knows how much junk carried forward over the years lol. So a new restore should help me make sure its not any settings or tweaks etc carried forward. (I've already tried erasing all settings)

So what I want to do is erase this iPhone 11 on 13.6.1 and wipe it totally clean. Like factory without upgrading the iOS. (I'm still holding out for jailbreak. Is t9 dialing and swipe selection really so much to ask for apple?!? anyway...lol)

I'm a bit of a digital hoarder. How can I set this phone up as a new iPhone and put my camera roll back the way it was as well as my iMessage/messages library?

Preferably using (3rd party) software on my Mac since I have loads of storage handy. My messages are around 30gb and my camera roll around 35gb I think it said. at $3/mo for 200gb in the iCloud I would entertain a 30 day subs to accomplish my goals but it makes me itchy lol. Apple isn't really known for trouble free consistency anymore. Even if its more money for 3rd party software I'm game.
 
The term "restore" refers to restoring a backup; there isn't a thing called a "new restore". You either erase and restore from a backup or erase and set up as new. If you're asking whether you can choose what to restore from backup, no, there isn't an option to do that.

 
I agree with what Namara says but I'll add that there are third-party apps, such as iMazing, and I'm not sure what the capabilities are regarding using those apps to restore selected data from backups.

TLDR
I want to setup as new iPhone
I only want my messages and camera roll to go back on the new iPhone setup the way they were. (photos still in recents)
How?
 
Also, does anybody know if a DFU restore connected to iTunes/Music force me to upgrade to the latest signed iOS?

I think maybe you've got iCloud backup confused with apps that store their data in iCloud. Understanding the difference will help you not lose data and photos.

You can't restore them selectively from a backup, but any of the data for the apps that use iCloud will be available on your new device if you sign in using the same Apple ID, including iCloud Photos. Take a look at that list in your iCloud settings so you know which apps they are. I believe Messages will work if you've got Messages in iCloud enabled, but I'm not 100% sure and I'm not going to test it. Maybe someone else can chime in with confirmation about that.

I'm not sure about that but I would suspect it will. Also it's either iTunes on macOS prior to Catalina or the Finder in Catalina and later. There's no restore functionality in the Music app.
