I have an old white macbook (2006 or 07) that was water-damaged beyond repair, and I'm wondering if it would be possible to take parts (basically RAM) and put into a black macbook. If not, what should be done to ensure the HD is wiped before I try to sell the old mac?

You should be able to boot it into Target Disk mode with another Mac and use Disk Utility to erase the drive with the security options
