Apple TV Selling Apple TV 2, return to factory, keep jailbreak.

As the title says, today I am selling my apple tv2 and want to get rid of all personal settings and accounts. How do I do this without upgrading to the newest (un jail breakable) version but also keep / redo my jailbreak.
I have the newest (5.0.2 I think) software and XBMC installed

Like all Apple iDevices, you must have saved the hash files to restore to older firmware.
If you saved them, after you restore, you would need to re-jailbreak.

I tried to restore using the jailbreaking program and it didn't remove my personal settings

Restores are done via iTunes, not the jailbreak tool

But if I restore it thought iTunes then it will load the newest software, then I can't jailbreak

The newest firmare is 5.0.2 (5.1.1)

So yes, if you restore the Apple TV, you can jailbreak it again.

I'd recommend saving the SHSH as well with TinyUmbrella.

It says 5.1 (6.0) is the newest and not jail breakable
