When I want to send a message to say someone thats name starts with an S, I tap S and a whole list of other people with an S in their name comes up that I have messaged in the past. There are people on that list that are not in my contact list.
Is there a way to clear that list. I have to end up scrolling through the list to find the right S listing I need

No unfortunately it's a glitch and the only way to solve it is to restore your phone.

Well darn....no choice but to live with it I guess.
Just what happens when you do restore the phone. Do you loose all your contacts apps etc?

Yes but icloud backs up all of your contacts. Your apps that you've downloaded / purchased are displayed in the App Store it's self so all you have to do is choose the ones you want to re download. You can back up all of your pictures on your computer. It takes about 15-30 minutes but cleans everything out.
