Because I consume YouTube primarily on my Apple TV and never got round to configuring my router to block ads at that level.

There is a real problem with terminology in this article. A subscription SERVICE is what most all of those shown are. I'll subscribe to a service, a VPN, a streaming vidio or music service, an AntiVirus, a gaming service like AppleArcade. Those are SERVICES with an ongoing benefit and the developer provides the service on an ongoing basis. I will NOT subscribe to an APP that requires subscribing. An App I own and the developer does nothing after the sale so they do not deserve anything after I buy my copy of the App. I will not subscribe to Office365, Adobe CreativeCloud, and such.

It is very deliberately deceptive to lump all of these very different things together as "subscription apps".

I have Hulu Live,Disney,ESPN bundle on all my apple devices that I don't buy through the App Store, because, that's just the way I did it. I don't consider it a subscription app, but a subscription service, a replacement for cable. I expect services to be subscription based. I'm not subscribing to your email client, todo list, or notes application.
