I have been a good little Apple soldier and moved all my mail over to Apple Mail by having my gmail accounts forwarded to my dot mac address (I was doing it with IMAP but it was clear that was not going to work). The one thing I really wanted to have happen was an email I sent from my desktop (from my dot mac address as that is the only option now), to show up in sent mail on my iPhone and iPad. Alas, it is still not happening. Is it possible? If so, what is the proper configuration of each device? Thanks for your wisdom/knowledge!
 
Talking about going all around Job's barn! All you had to do was to setup your Gmail account in Mail using the IMAP protocol.
 
I've had "sent mail" sync between Macs forever, and since the first iPhone and first iPad. This is with iTools/.Mac/MobileMe/iCloud. Never had a problem since January 2000 when they introduced the service.

I think you need to tell us more details of each setting on each device?
