I don’t think the oled bezels are actually bigger. It looks like they pulled the body back more, and the glass rolls over the edges more, making the bezels appear bigger.

Yeah, exactly this! Someone posted in another thread showing the metal part of the bezel being smaller on the S10.

The distance from visible display edge to case outer edge appear to be the same.
You seem to be exactly correct. Much less of the watch casing is visible from the front. The proportion of space taken up by the screen seems to be the same, just a different balance of bezel vs. casing around the edges.

Not sure how you mean "standardized" – the screens are not the same size or resolution.

Ultra / Ultra 2: 410x502 px, 1185mm²
S10 46mm: 416x496 px, 1220mm²

Thanks for clarifying. In that image it looked like both were the same size.

I wonder if there’s a reason the bezels have to be that thick (look much thinner on the phones)?
 
the bezels are there because the usable display area is flatter (like the ultra), which makes it easier to use the watch. Design elements won't go into the curved area where it's harder to touch/tap.

That's why iPhones and iPads keep a flat display area too, and never followed the curved glass trend on Android phones, where elements went into the curve and became unusable.

The curved glass is kept just to keep the sleeker look. So you have bezels, but a more usable watch display.
