So coming from a Series 4 where the screen was bright I sent my Series 5 back because the screen was dim compared to the S4

Got the S6 today and same thing its much dimmer than S4 and much harder to read in the dark without my reading glasses

The screen doesn't go bright like the S4 due to the AOD technology

I really want to upgrade from the S4 but its a big thing to lose
 
Did you go from aluminum to stainless?

Sapphire is slightly less transmissive than Ion-X Glass and can look very slightly dimmer.

Otherwise, @Otflyer has a good suggestion. Check brightness settings. The S4 / S5 / S6 should all be capable of the same brightness other than the crystal material making a very slight difference.

A year ago I went from S4 SBSS to S5 SBSS and couldn't discern a difference. Even used a photographic light meter on a white watch screen and measured no difference. The hardware can do it. Something's likely up with your settings.

I normally wouldn’t recommend this hastily, but if you’re in your 14 day return period, then just return it and exchange it for a different one. If it’s not defective, then you’ll know if it’s ‘user error’ by a setting that you’re missing or if you do have a unit that possibly has a faulty display.
 
First thing I did was set the brightness to full

Both S4 and S6 have 100% full brightness

Its like the S6 has some sort of brightness dimming, so doesn't go full bright like it would when in the day

Every Apple Watch I've owned since the S2 uses an ambient light sensor to moderate the display brightness to the environment.

I'm beginning to wonder if perhaps your S4's ambient sensor might be slightly wonky and you've not had reason to notice until you tried another Apple Watch?

There will always be a difference, because of manufacturing tolerances. I didn't compare my screens before I sold my S4, but it looks good to me on my watch.

I also had this on my iPad Pro 12.9 (2020). I had 2 replacements, because of dust and scratches. The original display was bright and awesome, my first replacement darker and also had dust under the display, the third one was perfect and brighter than the first replacement, but still a little bit darker than the original one.

That's the normal display lottery. If it isn't bright enough try to exchange the watch.

I've used the S4 for the last 2 years and just upgraded to the S6. When the screen brightens on the wrist turn I see no difference with my S4? Both are equally bright. Of course the watch face is rather dim on the S6 when not directly viewing it, but on the other hand my S4 was really, really dim. ;-)
