Hold crown and power button until black screen Apple logo shows.
I have not faced this issue on AW8 which is buttery smooth
Some notifications don’t seem smooth on my S8, it could just be the fact that you could be using a phone with pro motion running at 120hz vs whatever the watch is running at

I was going to post the exact same question. From the day I got my Series 8 last year to replace my Series 3 the notifications have never worked properly. The haptic is fine but the red alert dot takes about 1 minute to appear after the haptic. I keep hoping that the next update will fix it, but not so far. As you say, it's a minor annoyance, but annoying all the same.
