A computer with both ssd and hdd. Need the larger photo and video files to go to hdd, but the programs to remain on ssd.

I have been told two ways. First, set up a symlink. Second, when opening the said program, click on option to tell it where to find the file folder on the hdd.

Is there an advantage using one method over the other?

Depends on what programs you're referring to.

With iLife applications you can choose Libraries with the option method. In iMovie you can move project and stuff around within the application itself.

Some other applications expect to find their files in certain places, and do not have an option-open option (heh). In that case you have to use symlinks or aliases or whatever.

BTW, iPhoto Library Manager is real handy if iPhoto is one of the applications you're using.
