Setting default programs when opening items?

This is driving me nuts. I'm sure there has to be a way around this.

If I edit a file in Photoshop, my Mac somehow remembers that... and if I want to preview that file again, it launches Photoshop instead of Preview. The difference is 20 seconds or something. 😡

How do I get my MBP to open the light weight Apple programs instead of Office, Adobe, etcetera? 😕
