So how do I turn my gmail POP account into an IMAP account with Mail? Do I have to erase it and make a completely new IMAP account or is it enough just setting the server as smtp.gmail.com?

No it will be under the option where you set POP access. Mine didn't change until today. Just be patient.

Yes. First go to gmail and select the IMAP functionality. Read the gmail help for the server info you'll need to set up Mail.app. Then create a new mail account, select IMAP and plug in all the settings in the right places. There is no way to convert a POP account to IMAP in Mail.app.
